We got the rabbits all dressed, packaged & stored. Didn't take long @ all but there were 4 of us working. Came home heated the pasta, made a salad & ate a good supper.

Yesterday was DS's 13th birthday..we had a cook out at home, Imade him a semi home made banana cake (his fav) and decorated it all by myself.

I used those Mesquite chips on the charcoals and grilled swordfish, Lipton Onion Soup Burgers, hot dogs & corn on the cob. I had a plate of chopped onions, sliced green peper, sliced maters, kraut, cole slaw, and...
we chowed down like a pack of ravidged dogs.:ohmy: but it sure was yummy!


BTW..the swordfish was melt in your mouth good. :drool:

I ened up not getting to the pasta last night, so that is what we are having tonight. Canneloni stuffed with cheese and spinach with a meat sauce. Salad and garlic bread.

Last night I boiled a chicken and made stock so tonight is homemade chicken pot pie. I got a bag of stew veggies to add, who ever thought that finding bags of mixed peas and carrots would be so hard.

Geez I would think those would be easy to find. What kind of crust are you making for your chicken pot pie?

I just can't help feeling like this :scared: when I see someone asking about crust for a chicken pot pie...We just use noodles & do it stove top around here...pie crust just seems so alien to me.

I use puff pastry, easy peasy for pot pies. I also keep frozen pie shells on hand.

Tonight I'm doing georgia pork chops. Got some fresh button mushrooms I need to use up....

yesterday i made the best potato salad i ever made, and we bbq'd turkey cheeseburgers and boiled up some fresh corn on the cob. YUM-O!!

hubby took some homemade spaghetti sauce out of the freezer, so we will be having spaghetti for dinner!

He is exactly 50 yrs younger than me. Fun having a Virgo around, isn't it..?? Get this, I had my chart done many moons ago and she was a little apprehensive to tell me.. I'm a Double Virgo..!! Virgo moon rising, I think it was. Blessing and a curse but answered a lot of questions through the years....

Didn't BBQ CB's yesterday...will today. Had shrimp Alfredo over my rice. It was a microwave from that same company that made the salmon fillets I raved about last week. Their products are really superior.

Not as triple digit heatwave as predicted..only 90's today.

To me that is chicken & noodles not chicken pot pie. Pie needs a crust, lol. There are lots of different crusts that can be used from bisquick to regular pie crust to puff pastries to canned biscuits. IMO all are good.

No, not bunnies, those are baby rabbits. These were grown fryer rabbit meat pens. They were 6-12 weeks old, just the right age for meat production. They were bred & raised strictly for eating purposes.

I'm just going to use Pillsbury pie crust, last time I used puff pastry. War, I swear at one time I could find bags of peas and carrots together in the frozen section, now I can't find them anywhere.

That's how hubby's mother makes her pot pie, it's the dutch way. When I was younger I used to make my own noodles.

I did the georgia pork chop thing last week & ran out of COM soup, so I added a can of COT..it was Da Bomb!!!

I do not do any kind off crust or puffs unless I get a very good reason as to why anyone would want me to in the first place. I am not a baker of anything that involves crust or puff.:smile:

Me too..but I have found the PA Dutch brand pot pie noddles are very close to homemade.

No, it doesn't automatically make him a double..the key factors are the year, place and time. (where the sun was located at time of birth) Rather rare to be a double.

The name of the brand is "Waterfront Bistro". I've tried the Alaskan salmon and the shrimp Alfredo. Wild caught. Both outstanding new products and definite re-purchases.

Did a google and found their website.

Give it a try.

If you don't want to get puff pastry, get yourself some crescent rolls and use those! Sooooo easy.

I use crescent rolls on the bottom and top of my pot pies. Just make sure you bake the bottom crust for 10 minutes before adding the filling so it won't get soggy.

There is nothing to the crusts or the puff pastries, they are frozen. Just unroll them & lay them on top of your chicken pot pie then bake. I cannot bake a decent biscuit or pie crust from scratch but sure can do the frozen ones! lol.

Me, too! But I don't like soggy crusts, so blind baking helps.

I blind bake my fruit pie crusts for 10 minutes, too.

I'm dragging out my crockpot tomorrow - haven't used it in awhile. Would LOVE to make chicken and dumplings!

I did my beef ribs in the crock pot today, they were soooo good. I seasoned them with Cajun seasoning, coated them very heavy with flour, browned them in very hot oil. Once they were all browned I added more flour to the oil & made a dark brown roux. Added water, salt & pepper to that to make a rich brown gravy. Poured that over the ribs in the crock & let them cook on low for 4 hours.

I'm having to revamp my cooking. Mr. Noah has been put on a special diet cuz he's been having TIA's. No more red meat, no more pasta coated with alfredo sauce, no more vanilla ice cream with whipped cream.

OTOH - cooking will be a lot easier for me cuz we'll both eat the same thing now.

I need to start looking for more chicken, fish and bean recipes that are healthy.

Oh we eat a lot of fish and chicken with great sauces! We've really discovered we can do without a lot of bread, pasta, taters.....even red meat.... but do for a "treat" once in awhile.

The carnitas turned out great. I still have some shredded meat.

I am going to make a big batch of Marinara sauce. I will add some of the shredded pork to half the sauce. I love how finely shredded meat sticks the the skettie noodles. I will serve it with plenty of garlic toast. I sure DS will use his garlic toast to make sandwiches out of the skettie for his dinner.

She would brown the rabbit pieces and then finish cooking it in gravy she made from browning the rabbit.
I wish I could get my mother to give me her recipes. When I ask she tells me it is too much work. :shrug:

Oh yes! I have cooked rabbit & chicken that way. We call it fricassee & it is really good. I wish your mom would pass her recipes down to you too, nothing better than continuing a cooking tradition. Maybe get a tape recorder & get her to talk the recipes instead of writing them out would be easier?

The link I gave you shows that 1 serving is 27% of saturated fat for a normal 2000 cal. diet. I have seen it all the way up to 51% for 1 piece. It may be lower than beef but it is still way to high for a diet for someone suffering from TIA's. Perhaps a boneless pork chop would be a wiser choice. It only has 9%.

Exactly the way my mom used to make it and served over rice. :thumbup: I just 'watch' her to figure out the recipes, because she never measures anything.

But, it still doesn't taste like hers :(

Having something new today...and something old.

Will BBQ chicken stuffed with asparagus. Saw it in the butcher case and it looked delicious.

The old is homemade potato salad. Will get started on it now because the heat will be here soon. (mid-90's)

My mom & grandmother cooked a lot without measuring & I find myself doing the same thing now. About the only time my grandmother measured was when she was baking.

Here ya' go. I got the recipe from Angellaw over a year or so ago and make it all the time. I think Paul Dean on FoodNet made it for Chicken and we all started trying it and found it works well with Pork, too.

Georgia Chicken or Pork
4 tablespoons butter
4 skinless boneless chicken breast halves or pork chops
1 cup sliced mushrooms fresh or canned
2 tablespoons minced shallots/onions
S&P
4 ounces grated mozzarella cheese, or any cheese

Melt butter, medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add meat and cook 10 minutes on each side, or until tender. Transfer to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand until cheese melts.

That's how my gram mostly cooked, too. When she died in 1984, my Dad got her recipe box and eventually we put out a family cook book in 1991. We wrote all family members to send their German family favorites and then I put them all together with her etc; and we had it printed up for family and friends. I still have her recipe box and handwritten recipes.

I know that is a treasure for you. I have the little wooden recipe box filled with old recipes & some very old cookbooks passed down to me from my grandmother. Those are priceless to me.

I have been making a recipe book for my son. I started it when he was 16. That way he can always have the dishes I cook. By the time he was 17 he could cook a whole Thanksgiving meal by himself.
It turns out to be a really good thing I made him learn to cook because his GF can't cook.

I have been making a recipe book for my son. I started it when he was 16. That way he can always have the dishes I cook. By the time he was 17 he could cook a whole Thanksgiving meal by himself.
It turns out to be a really good thing I made him learn to cook because his GF can't cook.

What a great idea! My son learned to cook just by being under foot while I was in the kitchen. From a very small boy he always wanted to help so I would give him age appropriate tasks to do. He & I both loved the time in the kitchen together & when he married he did most of the cooking.

Time for a big pot of soup to have on hand, the last of the chicken soup is gone,so making lentil soup in the electric pressure cooker. Will have a cup of that and use up some frozen, breaded pop corn shrimp for dinner with some dips and a dinner salad.

Here ya' go. I got the recipe from Angellaw over a year or so ago and make it all the time. I think Paul Dean on FoodNet made it for Chicken and we all started trying it and found it works well with Pork, too.

Georgia Chicken or Pork
4 tablespoons butter
4 skinless boneless chicken breast halves or pork chops
1 cup sliced mushrooms fresh or canned
2 tablespoons minced shallots/onions
S&P
4 ounces grated mozzarella cheese, or any cheese

Melt butter, medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add meat and cook 10 minutes on each side, or until tender. Transfer to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand until cheese melts.

One I've made for years and think I've posted before: cup of rice bottom of grease casserole dish; chicken parts on top, then mix can of COM soup, 3 cups of water and packet of french onion soup and pour all over the top and bake til done.

I love it.

WH, sometimes I do my chicken and yellow rice on the stove top too. I'm with whoever posted above that normally if I'm having chicken with rice, then it's yellow rice.

Brown rice is rice that has not been hulled, leaving the bran part of the hull intact. White rice is rice that has been completely hulled & polished & is much less in nutrition. Yellow rice is flavored with saffron.

I cook one very close to this occasionally. You can use celery salt, just cut back on the regular salt. I serve it over white rice.

I always chop some onion into it. And, sometimes celery. Don't use garlic though. I think the rice has enough seasoning itself. Little S&P is all.

Oh boy I am not the one to help you there, we don't care for lemon on our seafood so I never cook with it. Give me my lemon in a lemon meringue pie! :biggrin:

I am having a hard time trying to plan anything for dinner because I don't know when or if we will be evacuated.
I think my best plan might be pizza or subway. I hate to take something out of the freezer only for it to spoil.

My favorite way is to make a simple crab stuffing and put on top and bake...

But, you can also sautee some garlic and onion in butter. Add some creole seasoning like Tony Chacheres or Old Bay seasoning and a splash of worstershire sauce and a splash of lemon juice. (Use a good amount of butter) Baste the fish with the butter garlic and then add some bread crumbs to the leftover butter/lemon/onio sautee and sprinkle over the fish and bake.

Sometimes I add a little parm cheese and chives to the bread crumbs.

Me too, I can't stand the meringue part. Next week I am gong to make a key lime pie for hubby's birthday, he wants it topped with fresh whipped cream.

It was really good. I used this recipe. With the only added herbs being Tarragon and some pepper. I sprinkled a small amount of parmesan cheese on top. Only after walking out in the garage and coming back into the kitchen could I smell how awesome it smelled. It's a definatey keeper. Mr. Gator was very happy!!

I'm on a mission to use up stored stuff in freezer, so making big pot of beef stew today. I have way too much "stuff" hoarded away from sales this past summer, LOL, some things I forgot about. So using up oldest things first. So we'll have stew tonight. And then maybe make some small beef pot pies with the lefovers.

I am miffed! I got my chicken all cooked & got ready to put the yellow rice in & could not find it in the pantry. I was positive I had a bag of it in there but if it is there I cannot see it. I even got DH to look & he could not find it either so I had to use regular rice. But it turned out good anyway. I now have yellow rice on my shopping list.

mix salad dressing mustard and sugar. pour 2/3 cup mixture over the chicken and marinade in refrigerator 30 min or up to 3 hours.

Grill chicken on greased rack over medium heat for 15 min. Serve remaining marinade over chicken.

You can also use boneless pork chops in this recipe. :drool:

Durkees fried onions (smash them up in a baggie)

Roll fish filets in ranch dressing and then add to bag with onions. Coat well and bake.

It is really good.

1 pound(s) (2 1/2 cups) dried black beans, rinsed

2 tablespoon(s) chili powder
1 1/2 teaspoon(s) cumin seeds or ground cumin
1/2 teaspoon(s) cardamom seeds or ground cardamom
2 medium onions, coarsely chopped
1 pound(s) mushrooms, sliced
8 ounce(s) tomatillos (see Ingredient Note), husked, rinsed and coarsely chopped
1/4 cup(s) water
5 1/2 cup(s) mushroom broth or vegetable broth
1 can(s) (6 ounce) tomato paste
1 tablespoon(s) minced canned chipotle peppers in adobo sauce (see Ingredient Note)
1 1/4 cup(s) grated Monterey Jack or pepper Jack cheese
1/2 cup(s) reduced-fat sour cream
1/2 cup(s) chopped fresh cilantro
2 limes, cut into wedges

Directions

I've decided to take some puff pastry and used it with leftover beef stew and sort of make beef pie pie dish. I'll need to thicken up the sauce some.

The best black bean sauce I ever had was garlic-kie and was served over baby clams in an oriental restaurant. Hmmm, I might google for a similar recipe. I also like to throw some beans, like garbanzo or black beans in my green salads.

i'm the queen of garbanzo beans in salads.... way back when, my salad bar salads consisted of the following ingredients: garbanzo beans, croutons, and blue cheese dressing. and that's all. :drool:

we had grilled boneless pork chops and blue box mac & cheese that i Sandra Lee'd with some onion powder, dry mustard and some shredded cheese.

a few weeks ago, i took the advice of the food network folks and really REALLY salted my boiling water when cooking pasta or potatoes... and, you know what? those folks really know what they're talking about! i used to just put half a dozen shakes from the salt shaker, but now i pour in that salt directly from the Morton's container. what a difference!!! :w00t:

The fried rice my son cooked last night was great. I ate the leftovers for breakfast.

Tonight we will have chili cheese burgers and fries. I will put chili & cheese on my fries too. Of course with onions.

Not sure of supper yet, still have leftover beef stew and lentil soup and plenty of mix greens for a salad, so either one with a salad, but sometimes DH comes home on Fri. with a Subway goodie, so will wait and see.

BTW my beef stew, thickened up a bit and with puff pastry was very tasty last night.

That is what I have here. I also love them in salads. I can't cut onions in general. I am very sensitive to the fumes. On my b-day they harvested all the fields here. It made me so sick.

Oh I bet you were miserable then! Maybe one of those slap chops would benefit you when you need to chop onions. I do mine in the food processor sometimes if I have a lot to chop.

Yes, I have the slap chop (Chop wizard) that dices or cubes things. When I want a "bulk" I throw in processer, fine chop. But I've heard like burning a candle helps, or putting a piece of bread in your mouth while cutting helps? MStewart gaves some tips several years ago.

I have tried every trick in the book. I even tried having a fan put on a barstool at my back to blow the fumes away. Didn't work for me.

That is why I use a lot of dehydrated onions & garlic for meat. One of the things I like using them is they flavor the meat and they absorb the flavor of the meat too.

I've always salted the water for taters and pasta, mom told me to and she was Italian, I also put in a Tab. or 2 of EVO, keeps it from sticking together after being drained.

i've always put the oil in the water as well. but this tons of salt stuff is new to me!! :laugh:

NO idea what's for dinner! i'd go to Noah's for lasagna, but i'm too pooped. plus, i'm still at work. :cuss:

I have tried that too. I am allergy to the fumes. I can tell when they are planted or harvested even over the hills. Due to our drought and hot weather every farm around here harvested on a very hot day. I was put in the hospital because of the effect on me.

I can eat them and love them but I can't cut them at all. I have to get DH to cut them. Even then it effects me. but I found my way around it. Dehydrated works for me.

I know I haven't been banned - but for some reason it asked me to "sign-in" and then told me that my password was wrong. Dunno what the problem was, but I just re-registered so I could get back on.

LOVE chili cheese dogs, esp with texas fries on the side to dip in that extra chili that drips off the dogs.:drool:

Dinner plans changed. I just grilled a Kansas City bacon/cheese steakburger, put on homemade bun and we each had half with a side salad. Sort of low carb... ;)

yep, i most certainly DO!! :wub: i'm almost looking forward to the rainy season so i can have an excuse to sit on the couch all weekend and watch it! lol

dinner tonite turned out to be just some Steakummmm sandwiches on plain ol' white bread. hubby had Miracle Whip on his barf and i'm out of mayo so i put just a little butter on the bread. i melted cheese on my Steakummmm. yum yum!!!

Last night I made a pizza and put it on the grill. Earlier I sliced up fresh vegetables from my garden and the farmer's market - purple onions, zucchini, beets, orange and yellow carrots, garlic - put them in tin foil with s sprinkling of olive oil, and grilled them!!! I used a fork to poke holes in the foil. OMG! They were ready about the same time as the pizza. Geeeeze, I hope summer never ends. That was the best meal I've had since I grilled veggies the last time! :biggrin:

OMGosh - I've had that!! It's delicious. It makes a great dip if you don't use the noodles on the bottom.

Grew up on them too...same and different "names".

No measurements...but we'd mix the ground sirloin (about 3 1/2-4 pounds...some use 3/4-1 pound of ground pork) with 1 cup of dry rice cooked,some garlic, juice from sauerkraut and some of the tomato sauce, salt and pepper, paprika, and 2 egg (about 1 egg per 1-2 pounds of meat?)....and wrap them inside the parboiled cabbage head leaves....toothpick to hold..put in pan....and we would alter....either use a can of tomato soup (Campbells)...or diced tomatoes and tomato sauce....and add sliced onions to the 'sauce' if desired, and sometimes add the sauerkraut to the sauce mixture (I didn't always do that..enough cabbage already!).

There are probably a lot of authentic recipies online?

Life is good. Froze the rest for the future.

Had the steak with a salad and breaded/baked mushrooms.

Knowing that the next three days are going to be an "eatfest" I made breakfast for dinner, I swear it's the only time I like eggs.
Tomorrow we are having a roast dinner, Monday, we are going out with DD and our future son-in-law, and Tuesday hubby turns 63, I promised him, Eggs Benedict for breakfast and lasagna full of beef and pork for dinner, followed by his favorite key lime pie. Lord I pray he see's 63 and 1 day.
Wed, I will be serving him water and a napkin. LOL

Holy Smokes! That 8 Layer Casserole is a definite keeper in this house! That stuff is addicting. The only change I made was the onion placement. It said to add the chopped onion to the cream cheese/sour cream mixture & I felt they would not be cooked enough. So I added them to the ground beef when I was browning it then I added some onion powder to the cream cheese/sour cream mixture.

Between the filling and buying a graham cracker crust it's a lot cheaper than making homemade, and it tastes every bit as good. And this is a no bake pie. I have always said I love cooking, but I hate baking. :laugh:

Wow that is an easy recipe but I wonder about the egg yolks. Are they cooked enough with just the hot butter? Raw eggs can have salmonella.

War, I heated the butter on the stove. After I added it to the blender, I put it on high for a minute, shut it off for 30 seconds then cranked it back on high for another minute, it came out perfect. My hubby even said the taste was richer.

To kill salmonella the egg yolks must be heated to @ least 140 degrees. By using the double boiler method & cooking that would kill the bacteria. I am not sure just heating the butter then adding it to the egg yolks would be hot enough, long enough to do that. But neither of you got sick so it was all good this time. Glad yall enjoyed it & it does sound delicious. I am tempted to try it.

That's 3 of my favorite foods!

Last night I cooked porkchops in the electric skillet and added sliced/peeled apples. After I peeled the apples, I sprinkled them with cinnamon-sugar - they were all yummy before I even added them to the skillet.

The only thing that would've made the meal better is that acorn squash!!
