We ended up not eating the roast for supper. We went to some friend's house & it was too late to put it on to cook when we got back home. We got burgers & onion rings from Whataburger.

Rather than the Kansas City steakburgers, I realize I still had left over BBQ boneless pork ribs, so reheated, and made some Mac and Cheese: made rue, then added milk and some cream and sour cream and some broth to make a thick sauce, little nutmeg, cayenne, and provolone and American Cheese. Heated till all smooth and creamy and poured over cooked elbow mac, topped with panko crumbs for cruncy top and baked til bubbly.

I'm making chicken fried steak with mashed potatoes/gravy and brussel sprouts for dinner.

I haven't had CFS in a while and it sounds so good right now :thumbup:

That sounds so good, that is truly one of my favorite meals.

I'm cooking up a storm today to get a jump start on the week. Tonight we're having shrimp stir fry with fresh veggies from the garden. I have a pot of 15 bean soup simmering, and another pot filled with chicken bog slowly cooking. I rather like the idea of "heat and eat" after working all day opposed to coming home and spending an hour in the kitchen.

Happy Monday...:)
We had a company picnic Saturday and my aunt's 82nd birthbday party yesterday so there wasn't much cooking going on at our house...whoohoo!!!
I got the crock pot out this morning and I put some frozen skinless, boneless chicken filets in there with a can of stewed tomatoes, golden mushroom soup and onions. We'll have country crock taters with it and french cut greenbeans.
Did anyone watch $10.00 Dollar Meals with Melissa DeArabian yesterday??? She made this wonderful looking orange chicken and crunchy potatoes...I think I am going to make that meal for us this coming Sunday.
I really like her show...always learn some new little short cut.
I think Rachael has competion for her spot!!

I noticed Sandra Lee's new show has been revamed with cooking for pennies or something -- not called "almost homemade" but she gives more cost per serving, bargain ideas and new kitchen, no table decor stuff anymore. It came on right before Melissa's 10 Dinners for 4.

Go to FoodNet, if you like her show, and post on her site, and rate the recipes etc, or say you like the show. I saw Guy of Big Bites say, they give you six shows, and then watch feedback and rating to see if keep the show etc. Amy, the winner before Guy, didn't make it.

Cool here today, guess, it's getting Fall weather, and time for some heartly split pea soup, got a ham shank ready to defrost.

The Party Planners. I liked them too, they both seemed to have the shakes pretty bad though.

I really enjoy watching Anthony Bourdain in "No Reservations" on the travel channel

Willow, that is such a good idea. I need to get mor organized so that I can do that. Plus, it's been so hot here...... hot, hot hot that I just don't want to sweat in the kitchen after working all day either.

Yes, they had good "party" food ideas, and after awhile they had them on very early on a Sunday morning, too early for me to see and probably don't have the show anymore.

But Sandra and Melissa's idea's for saving money or cooking close to "from scratch" is my way of cooking! Man when chicken goes on sale, I buy up as much as I can! and repkg. and freeze. And I'm always unit pricing and figuring cost per serving.

The "boys" did have a bit of a shaking issue..but I enjoyed them.

I loved the new format for Sandra's show. Glad they moved away from the tablescapes' and cocktails. They were fun, but it took time away from the actual cooking.


I made her salisbury steak last week and it was to die for.

We had an unplanned BBQ yesterday. Ricky (DS's buddy) was at our house for the weekend. His dad called & asked if it was ok for him to buy all the food and bring his other 2 boys and the oldests girlfriend over for a cookout. Well..why not if be was buying & doing the cookin.

He showed up with the charcoal, really nice NY Strip steaks, 3 whole racks of ribs, chicken legs, bratwurst & hot bogs, tater salad & mac salad... a case of beer & soda's....they did all the cooking & I sat and drank beer & watched..my kind of a BBQ. :thumbup:

I like to do the exact same thing starting in the fall through the winter and cool parts of the spring. I've been very bad this summer with doing it though--I hate having to worry about dinner on the way home from work.
I think your bean soup sounds so good....having hot bread and butter too???

i have no idea what's for dinner. after baking a whole chicken on saturday and making homemade pizza dough & pizza yesterday, i'm fresh out of ideas!

Hubby wouldn't dream of having soup with out bread and butter. I added a little Cajun seasoning to the soup for an added kick. Most nights it's just the two of us and he loves soup, I get sick of cooking a big meal and having most of it end up as leftovers, which is a taboo word according to my girls. At least with soup I can always freeze it.

I saw this recipe in our local paper over the weekend. I think I want to try thi sone:

Chunky Chicken Quesadilla

4 large whole-wheat tortillas
2 cups shredded Cheddar
1 Granny Smith apple, diced
1 red onion, diced
2 1/4 cups cooked and sliced chicken or veggie chicken
3/4 cup Peanut Sauce, recipe follows
Sour cream, for garnish
Directions
Preheat grill or grill pan.

Place tortillas on a cutting board. On half of each tortilla place the cheese, apple, onion, and chicken. Fold the top half of the tortilla over and place on the grill. Grill for 2 to 3 minutes on each side until the cheese has melted and the filling is warm. Cut each quesadilla into 4 triangles. Garnish with Peanut Sauce and sour cream.


Peanut Sauce:

1 cup peanut butter

3/4 cup hot water

1/8 cup molasses

1 teaspoon soy sauce

1/4 teaspoon cayenne pepper

1/4 teaspoon sugar

1/8 teaspoon salt

1 tablespoon lemon juice

In a mixing bowl, whisk together all ingredients until smooth. Store leftover peanut sauce in an airtight container in the refrigerator for up to 1 week.

Theal, you're so right...I need to go to the Food Network and do that....I would just love to see her succeed. That chicken was soooo appealing and easy!

I think that Sandra Lee's new show is ok but....she loses me whereas Melissa didn't. I can honestly say I don't miss that table-scape segment AT all....LOL!!!

Who in the world has time???

Which reminds me....is Martha Stewart still on or???? I never hear anything about her anymore it seems.

I love her little tips that she gives throughout the show.

Don't know what I'm making for dinner - I am NOT in the mood to cook anything and don't wanna chop up salad, but SOME people in this house insist on eating, so I'd better put my Thinking Cap on. :rolleyes:

I always learn something new from her. Example: (as silly as this sounds of me...lol!)...when a recipe calls for frozen orange juice I always wonder "now what will I do with the rest of it". I never thought about refreezing and just taking what I needed out...duh!!!
Anyway, that's just the kind of thing that I so enjoy about her.

Reminds of the way Rachael Ray was when she started out....sheer enjoyment and my husband has liked every single dish of hers I've made(Rachael's).

I ended up making chicken and yellow rice. Will steam some asparagus at the last minute. Easy Peasy.

Well her tip of taking out the bone, was good, too. And frozen breasts with bone are cheaper than deboned frozen ones, and with bone more moist, as I've heard many cooks say. So that was a good tip.

My split pea soup in pressure cooker came out good. Have enough for the week now, as a side or for lunch. I had some sausage that needed cooking up, so I got out eggs, diced onion and some canned green chilis, and scrambled all and made some breakfast burritos and wrapped up in freezer, for a quick breakfasts.

I am trying so hard to learn to like her, she's just a little to perky for me, watching her makes my teeth hurt. I really like Anne Burrell from Secrets of a Restaurant Chef. And I love watching Nigella, I love how she closes her show. In her bathrobe picking on leftovers. :laugh:

I agree that she's a TAD too perky right now and I'm hoping it's just cuz she's nervous about being the Newbie on the Food Network. Maybe she'll calm down.

That's exactly why I stopped watching Rachel too, and her morning show, OMG all she does is screech IMO, I think in the beginning she was trying to be like Oprah, Now I just can't stand the sound of her voice. I read in Parade Mag, a while back she makes millions a year, I forget the exact number but I was like :ohmy: when I read it.

ITA bear..they are really good for package food. I also like there stuffed cabbage rolls..YUM!

Oh and DS loves their mac & cheese. I make bacon & add some of that to the M&C sometimes.

and now that I think more..their creamed dried beef (SOS), spiced apples, chicken ala king...ya know..I don't think Ive had one we did not like come to think of it.

I've enjoyed their Lasagna for sometime.

Do you have any recommendations for other Stouffer's that you enjoy..??

Their mac and cheese is to die for!! Cheesy, rich, creamy. I'm so glad I have one in the freezer :laugh::laugh:

I agree with Willow on the green peppers, the mac & cheese, and Yum their Creamed Chipped Beef over toast is to die for. Great, quick and filling meal anytime Bear. :thumbsup:

Honestly War you can't beat them. I have had their stuffed cabbage rolls too and they are very good. You can find their stuff on sale once in awhile, that's when I stock up but I always have two packs of chipped beef every grocery trip.

We have a Stouffers Outlet about 1/2 hour from here. I go there every once in a while to see what they have.

ITA VG..the chipped beef is better than mine...IMO

I plan to fix some country style ribs some way this evening, if not it is either BST's with swiss or some chipped beef on toast.

I love that stuff...I have a corn beef in the freezer...I see Reuben Casserole in my near future for sure.

LOL Willow. Well your dogs were sure happy. I will say I don't recommend the nuking method. We tried it once and it's better to boil the bags in water as instructed.

ITA..boiling is much easier & less of a mess IMO:biggrin:

Its great on toast...I also like it on a boiled or baked or even a fried tater...YUM..fried taters with onion & creamed dried beef on top...perfect breakfast.

NY steak last nite was heavenly!! had it with a great salad. tonite we're having veggie burgers smothered in carmelized onions and mushrooms and cheese. :drool:

That's where I got the idea but I don't use all the ingredients it listed. I make mine just as if I were making a sandwich.

I spray the botton of a glass baking dish with cookign spray then put down layer of kraut, then layer of corned beef (I chopped mine up) and then layer of thousand island dressing ( I go light on this), then tons of swiss and then cubed dark rye on top. Drizzle rye with melted butter and bake.


Sometimes I double the layers. YUMMMM Now i can't wait to have this for dinner.

I just finished a left over piece of steak and a rib along with some buttered lima beans for my lunch..I am stuffed to the gills!

Here's Hansie's recipe if anyone wants it - it's delicious.

I take a can of kraut and make sure you drain it really well.

Put it in a dish and add some sour cream to it. (1 cup approximately).

Then I add garlic salt/pepper if I'm not adding onions (mighty good with kraut anytime) or just salt and pepper (to taste). Spread that out in the bottom of your dish.

Then add some corned beef.

On top of that, put your swiss cheese (however much you want).

Put some 1000 Island dressing over that if'n you want.

Layer some rye bread (I use a Hearty Rye) covering it all.

Melt a stick of butter and pour that over the bread.

Bake it up in the oven until it's heated and the bread is nice and crispy.

I use a 9x13 pan and bake it at 375 until the rye bread is crispy.

Good day all. Picked a few more cherry tomatoes today. Yippie. Tonight will be those Kansas City Bacon/Cheese Steakburgers and a salad. Watching the carbs again..... Will defrost a whole chicken for tomorrow or day after. Blackberries are prolific. Keep picking and freezing; and plum tree is loaded. Have to look up plum recipes. Any ideas?

have you ever had plum sauce when you get chinese food (mainly mu shu pork)? it's delicious! here's a recipe i found.

2 pounds ripe plums
1/4 cup honey
1 tablespoon grated fresh ginger
1 tablespoon water
1 tablespoon minced fresh garlic
1/2 teaspoon red chili paste, or more to taste
1/4 cup soy sauce



•Pit and chop the plums.


•Place them in a medium-size saucepan along with the honey, ginger, water, garlic and chili paste. (I use Chinese Hot Bean Paste, flavorful but hot.)


•Bring to a boil, then reduce the heat and simmer until the plums are soft, about 15 minutes.


•Remove from the heat and stir in the soy sauce.


•Puree the mixture in a blender or food processor.


Note: I once made this sauce with plums so overripe and juicy that it had to be thickened. If that happens, thicken it with a little cornstarch and water; turns out great.

This recipe makes about 4 cups. What you don't use after a few days can be frozen for up to a year.

Whenever I am looking for a recipe, I search http://allrecipes.com/Default.aspx I love the ingredient search option http://allrecipes.com/Search/Ingredients.aspx Oh and I always read the reviews and take them into consideration when using one of their recipes.

I saw several recipes for plums including some that state the freeze well and a couple plum jam recipes.

Quite tasty! I just whipped up a batch. I didn't have red chili paste, so used wasabi paste for "heat." It's all cooling now, then I'll freeze some. Will be a good dipping sauce for chicken, pork, even shrimp I think. Was easy peasy to make.

wow, you are quick!!! frankly, the plum sauce i've had doesn't have any "heat" element that i can taste! but definitely a good dipping sauce for all that stuff!

Well, when I read the recipe, I saw I had all the ingredients on hand, & those plums had been sitting for a few days, so HAD to use them.... I didn't taste the wasabi either, all the ingreds. blended nicely.

Oh my, I made a blackberry pie. My DH is one happy camper. I'll have to freeze some, can't it up so fast! That would be sinful. I used two premade pie shells, I keep on hand frozen in the freezer, so it was fast to do.

our veggie cheeseburgers smothered in carmelized shallots and sauteed mushrooms was great! had buttered bow-tie noodles as a side. that was hours ago and i'm still stuffed. :sleep:

Good day all. Picked a few more cherry tomatoes today. Yippie. Tonight will be those Kansas City Bacon/Cheese Steakburgers and a salad. Watching the carbs again..... Will defrost a whole chicken for tomorrow or day after. Blackberries are prolific. Keep picking and freezing; and plum tree is loaded. Have to look up plum recipes. Any ideas?

I got a couple of cat fish out of the freezer. I'm going to dredge them and pan fry them, serve with lemon butter, and these cute little squash I got at market on Saturday. They look like tiny little yellow squash, but the one end is green and the rest is yellow (they are only aboput 3 inches long and about as round as a quater) I have no idea what they are called.. I had them a few weeks ago & they were yummy. I will saute them in EVOO with some onions & garlic and throw in a few cherry maters when it is almost ready.

Last night we had potato salad, baked beans and bacon spinach swiss cheese and tomato sandwiches. Tonight I have cut up boneless country ribs in the crock pot prepared 3D's way with the tomato and eat over pasta. Yum!

*When the family packs of ground beef are on sale, I will brown 5-10 lbs, rinse, drain well and freeze in 1-2 lb packages. It comes in handy on my hectic days for tacos, spaghetti, sloppy joes.....

I have turkey cutletts thawing & plan on chicken frying them. All of yalls talk of chicken fried steaks got me to craving it, lol. I know I will make some milk gravy but not sure yet what other sides. Maybe some peas & carrots.

Even with our air conditioning an oven on makes it too uncomfortable inside. The ac just cannot keep up. I did turn it on earlier in the week to cook some cornbread to go with our soup & we were too warm for a couple of hours after it was turned off. And the ac compressor did not cycle off for more than 3 hours. We do all we can to keep the power bills under control but even with that they average about $300/mo.

Planning commission ok'd tearing down existing Chinese smorgasbord (hmm...do those two words go together..?? Maybe that's why they went out of business..ha)

Well you can get either a ham/cheeseburger or a hotdog, that and fries is all they sell. I always get a cheeseburger and an order of Cajun fries.

Yes, sometimes. Usually when he gets home he doesn't want to even consider cooking. I'd say he does about 30 % of the time. We only live about 3 doors down from each other so we eat together almost every night.

He makes the creamy crab dip on the weekends sometimes..... I love that stuff!

dinner sounds better than mine..we ended up eating frsh peaches soaked in sugar w/cinnamon on vanilla ice cream with whipped cream..my fish was AWFUL..that just ruined it all..so we ate dessert instead...milk & fruit..can't be all that bad..and its too dang hot to cook

The Commissary (grocery store) at Arnold Air Force Base is where we get to shop cuz my hubby is a retired Marine. LOTS cheaper than the local grocery store - sometimes it's 1/2 the price, depending on what you're buying.

Holy moly, the chicken fried turkey cutletts were delicious. I used a lot of cajun seasoning on them because I knew turkey can be sort of bland. When I opened the package I discovered there were 8 cutletts instead of 4 like I thought. I cooked 4 so I still have 4 I can cook tomorrow. I'll be buying those again but next time I will know to break the package down into two cookings.

Weather here is about the same as Sunz & theal except I live closer to the Pacific ocean coast. Heavy fog and mist in the morning so it seems that it has rained. 85 now and 100's this weekend. All the better to make your wine...ha

Yes, I scramble a bunch of eggs, sausage, diced green chiles, diced onion, minced garlic, and cooled; then warmed some tortilla for easier folding and put mixture on tortilla, then topped with cheese of choice and tightly wrapped with plastic wrap and froze. Made a dozen or so: which last a week or so. But so handy. The night before I take out one or two to defrost in fridge, and then just nuke for 30-45 seconds in the a.m.

I got the idea when flying to Seattle earlier this month, and having an hour to kill in the airport and went for a "snack." And in the deli section they had a breaky burrito wrapped tight in cellophone, and a microwave there. They had eggs, sausage and diced potatoes and cheese and grn pepper. I thought, hmmmmmm. I can do that at home! If I plan ahead.

I have TONS of anaheims in my garden!!! I have a gas stove, so I throw them on and light the burner and let 'em roast. Then, when they're black, I put them in a ziplock bag, seal it, and let them cool off. After they are cool, I peel the skins off, make a slit, and stuff them with cheese. Put 'em in the oven and melt the cheese and you're good to go! That's the plain variation....lots of goodies you could stuff them with.

Paprika
1/2 cup shredded Cheddar cheese
Directions:
Stir the picante sauce, water, corn and rice in an 11 x 8-inch shallow baking dish. Top with the chicken. Sprinkle the chicken with the paprika. Cover the dish.

Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender. Sprinkle with the cheese.

disclaimer: i don't 'hate' lettuce SOME of the time. :closedeyes: you know how most people's salad is like mostly lettuce and the rest is "stuff?" my salads are just a layer of lettuce on the bottom, then covered with (mind you, THIS is my "salad bar" method - i don't have all of this stuff at home usually): sliced beets, garbanzo beans, black olives, avocado, green onions, cheese, cheese, cheese :tongueside:, mushrooms, chopped egg. then just tossed all together, which makes the small layer of lettuce just part of the ingredients. does THAT explain it??? hammer

I am going to sort of combine the two recipes I posted last night. I am going to use the first one with rice but I don't have chicken breasts, I have ground beef. So I am going to season & brown it then drain & mix in with the other ingredients. We will eat it in warm soft flour tortillas.

Sweet Tea

About 10 tea bags
1 cup sugar
small pot of water with lid that fits tight.
Gallon size container

Put sugar & water in pot, stir & bring to a boil. Remove from heat & place tea bags in, cover immediately & let steep @ least 1 hour (the longer the better). Remove tea bags, pour tea syrup into gallon container, fill the rest of the way with water.

You can buy peach & raspberry teas @ your stores or online.

I'm not much of a gambler...lol I always pick my horses by name, not stats and then I only place $2 bets. So even if I lose every race I'm only out $20

We pick by name too. LOL. When we went Indiana we went to the races, hubby picked "you and me kid" I knew it was going to be a winner, it lost and I told hubby, who has been saying that to me for just about 30 years to never say it again. LOL

My mom said to always bet on the gray horse..so I do...and I look for the ones with a large muscular hind quarter...who need to read stats with that kind of logic anyway.

Tonight, I'm frying some already breaded pop corn shrimp and will have with a salad and dipping sauces, including that plum sauce.

i'm getting into the breadmaking too!! i don't have a machine, but it's fun to "accomplish" something from scratch, like Little House on the Prairie. :tonguewag: i forgot.... what is the secret to make a really SOFT loaf? soft like a hamburger bun or a Subway deli roll?? :confused:
